Veggisaurus Lasagna

Ingredients:

• 1 box (12 lasagna noodles) – Great Value Lasagna Pasta: $1.00
• 2 cups (16 oz) – Great Value Ricotta Cheese: $1.98
• 2 cups – Great Value Shredded Mozzarella Cheese: $2.28
• 1 cup – Great Value Grated Parmesan Cheese: $2.98
• 2 cups – Great Value Marinara Sauce: $1.68
• 2 cups assorted vegetables (e.g., spinach, bell peppers, mushrooms) – Great Value Frozen Mixed Vegetables: $1.78
• 1 egg: $0.08
• 1 teaspoon dried basil: $1.00
• 1 teaspoon dried oregano: $1.00
• Salt and pepper to taste
• Cooking spray

Instructions:

1. Prep the Lasagna Noodles:

• Cook the lasagna noodles according to the package instructions. Drain, rinse with cold water, and set aside.

2. Prepare the Vegetable Filling:

• Thaw the frozen mixed vegetables and chop them into smaller pieces.
• In a skillet, sauté the vegetables with a little salt and pepper until they are tender. Set aside.

3. Mix the Cheeses:

• In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, half of the grated Parmesan cheese, the egg, dried basil, and dried oregano. Mix well.

4. Assemble the Lasagna:

• Preheat your oven to 375°F (190°C).
• In a baking dish, spread a thin layer of marinara sauce.
• Place a layer of cooked lasagna noodles on top of the sauce.
• Add a generous layer of the cheese mixture, followed by a layer of sautéed vegetables.
• Repeat the layers until you’ve used all your ingredients, finishing with a layer of noodles on top.
• Spread the remaining marinara sauce on top of the lasagna.

5. Bake:

• Cover the baking dish with aluminum foil and bake for 25-30 minutes.
• Remove the foil, sprinkle the remaining mozzarella and Parmesan cheese on top, and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
